Instructions

Marinate chicken in yogurt, garam masala and ginger-garlic paste for at least 30 minutes.

Sear the chicken in a hot pan until charred at the edges; set aside.

Melt butter, soften the onion, then add cumin and remaining spices for 1 minute.

Add tomato puree and simmer 10 minutes until thickened.

Stir in cream, return the chicken and simmer 8 minutes. Finish with fresh coriander.

For real smokiness, char the marinated chicken under a hot grill. Thighs stay juicier than breast.
