Instructions

  1. Soft-boil the egg 6½ minutes, then cool under cold water and peel.

  2. Toast the sourdough until deeply golden.

  1. Crush the avocado with lemon, salt and pepper; pile onto the toast.

  2. Halve the egg over the top; finish with chilli flakes and olive oil.

💡 Tips

Crunchy, well-toasted bread is the whole foundation — soft toast goes soggy under the avocado.
