Avocado Toast with Soft Egg

Soft-boil the egg 6½ minutes, then cool under cold water and peel.

Toast the sourdough until deeply golden.

Crush the avocado with lemon, salt and pepper; pile onto the toast.

Halve the egg over the top; finish with chilli flakes and olive oil.
