Toss beef with a spoon of soy and the cornstarch; rest 10 minutes.

Sear beef in a screaming-hot wok in batches; remove.

Stir-fry broccoli with a splash of water until bright and crisp-tender.

Add garlic, ginger and the sauces; return beef and toss until glossy.
💡 Tips
Slice beef across the grain for tenderness, and cook it hot and fast in batches so it sears instead of steams.
📝 Notes
Serve over steamed rice. Double the sauce if you like it saucy.
